Tostadas at home

VEGETARIAN REFRIED BEANS.  ADDED
ONIONS, JALAPENOS AND CILANTRO FOR FLAVOR
CHICKEN TOSTADAS
DINNER AT HOME


Bought another one of those whole Rotisserie Chickens at Costco for $6.  Used part of the chicken breast to make some really good Chicken Tostadas.  Heated a can of Vegetarian Refried Beans that were kicked up with some sauteed onion, jalapeno and cilantro.  Made some fresh salsa with tomato, onion, cilantro and lime juice.  Assembled the tostada by pan frying a corn tortilla in a small amount of vegetable oil.  Once the tortilla was crispy we patted it dry and topped it with the beans, a layer of taco sauce, chicken, lettuce and the salsa.  Quick, inexpensive, delicious and very filling.
MADE HOMEMADE SALSA WITH TOMATO,

BEANS, RED TACO SAUCE AT SHREDDED CHICKEN

TOP WITH LETTUCE AND FRESH SALSA
